INGREDIENTS:
1 (10-ounce) package frozen whole kernel corn, thawed
Milk
1/2 cup flour
2 Tablespoons melted butter or margarine
1 teaspoon salt
3/4 teaspoon baking powder
1/8 teaspoon pepper
2 eggs, beaten
Vegetable oil for frying
INGREDIENTS for Orange Sauce:
1 cup sweet orange marmalade
1/4 cup butter or margarine
TO PREPARE Corn Fritters:
Drain the corn, reserving the liquid. Combine the reserved liquid with enough milk to measure 1/4 cup. Combine the milk mixture, corn, flour, butter, salt, baking powder, pepper and eggs in a bowl and mix well. Pour the oil into a skillet to a depth of 1/2 inch. Heatuntil oil is hot.
Drop the batter by Tablespoonfuls into the hot oil. Fry until golden brown of both sides; drain. Drizzle the Orange Sauce over the corn fritters.
TO PREPARE Orange Sauce:
Combine the marmalade and butter in a saucepan. Cook until mixed and heated through, stirring constantly.
