The endive is a dedicate vegetable with white and pale green leaves. Normally harvested by hand, it comprises 95% water and is extremely low in calories.

Endive contains vitamins C and A, as well as calcium and fiber. Purple endive also contains the powerful antioxidant anthocyanins.

Natural healers recommend the use of endive for dealing with insomnia and purifying blood.
