Here’s a twist on an old and beloved recipe from our childhoods – sloppy
Joes.  This one is vegetarian, almost no fat, and tons of flavor.  It
takes about 15 minutes to make.  Serve with homemade sautéed potatoes,
cole slaw, or tossed salad.

Dr. Norris J. Chumley’s Sloppy Josephina’s
Serves 2

1 cup TVP (texturized vegetable protein) or Seitan
1 beef or chicken bouillion cube
7/8 cup boiling water
1 small onion, diced
½ green pepper, diced
2 tablespoons ketchup
dash chili powder
salt and pepper to taste
2 whole-wheat buns or slices of bread

In
a separate metal or ceramic bowl, add the bouillon cube to the boiling
water, then soak the TVP for a few minutes until the water is fully
absorbed.  In the meantime, in a skillet place 1 tsp olive oil and sauté
the onion and green pepper for a minute or two.  Then add the soft TVP
to the sautéed vegetables, the ketchup, and seasonings.  Stir and heat
until the mixture is warm, then serve on the buns.

This recipe
has no fat, other than a trace from the olive oil.  It is also very low
in calories.  For a variation, you could add meat – if you desire – and
reduce the TVP proportionately.
