I had a wonderful and healthy lunch. This is what I had, and it has stuck with me for hours.

Dr Norris Chumley’s “Something’s Fishy” Salad

1 cup baby spinach leaves
1 cup mixed salad greens
1 tomato, cut up
1 carrot, skinned and shredded
1/2 green pepper, cut up
1/4 cup shredded mozzarella cheese, skim
1 small can sardines

Toss the salad greens. Add cut up tomato and green pepper, then the shredded cheese, and finally the sardines on top.

Add extra virgin olive oil and balsamic vinegar, to taste.

I hope you enjoy this salad as much as i did, and I am not one to generally like salad!
