Spinach Souffle Recipe

INGREDIENTS:

  • 2 (10-ounce) packages frozen chopped spinach, cooked and drained
  • 2 pounds small curd cottage cheese
  • 6 eggs, beaten
  • 1/2 pound grated cheddar cheese
  • 1/2 pound butter, melted
  • Salt and pepper, to taste

TO PREPARE:

Preheat oven to 350 degrees.  Combine all ingredients and spoon into a 2-quart casserole.  Bake 45 minutes or until set.

SERVES: 16
