  • 1 quart milk

  • 3 whole eggs

  • 3/8 cup sugar

  • 1 teaspoon vanilla, optional


1.  Scald milk.
2.  Beat eggs thoroughly and strain.ace
3.  Add sugar to eggs.
4.  Beat small amount of hot milk into egg mixture.
5.  Add egg mixture to milk slowly and cook on low heat, stirring constantly, until spoon is coated.
6.  Add vanilla, if desired.
7.  Strain and refrigerate.

Milk is scalded when it makes a coating on the spoon – before it boils.
