INGREDIENTS:
In a medium saucepan over high heat, bring salted water to a boil. Add green beans. Blanch until beans are bright green, approximately 5 minutes.
In a serving bowl, combine olive oil and garlic. Set aside.
When beans are done, remove from heat and rinse with cold water to stop beans from cooking any further. Drain. Pour into serving bowl and toss thoroughly with olive oil and garlic. Season with salt and pepper. Set aside to allow flavors to blend and serve at room temperature.
NOTE: Adding salt to boiling water keeps beans a bright green color.

- 1 pound fresh green beans, cleaned with ends snapped off (see note)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
