Dysfunctional Chef: 3 SUMMER Salads – Salacious Strawberries, Succulent Nectarines, Precious Plums !!!

Summer Salad ALERT!!!

Greetings from the Land of HOT!  I’m currently in Tucson, Arizona (Attending a June wedding! Rehearsal dinner tonight!  We’re so excited!!!) and it is hot, hot, hot.

Get this:  the weather-person promises that the high of the day will be 112 degrees!  Can you imagine?  (Probably lots of you can, those who live in hotter climates.)

My first thought upon hearing the heated news was “Good Golly Miss Molly! It’s only June 1! What happens in July and August?!?”

My second thought was “Geeze Louise, what righteous recipes can I whip up today without turning on the oven!!!”

So … I searched through the Our Lady of Weight Loss Kitchen Vault and decided on these salacious, succulent salads.

Before the heat hits (like now, it’s 5:30 am), I’m heading to the supermarket to pick up the ingredients!  My cooking will be done before 7 am!  And then, I can kick back, relax and ready myself, bottle of water in hand, for the heat!

Salacious Strawberry & Fabulous Feta Salad

Ingredients:
1 cup slivered almonds
2 cloves garlic, minced
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 cup fig balsamic vinegar
1 head romaine lettuce, torn
1 pint fresh strawberries, sliced
1/2 cup crumbled feta cheese

Instructions:
In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.
In a bowl, whisk together the garlic, honey, Dijon mustard, and fig balsamic vinegar.
And now, in a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese.
Drizzle dressing over the salad and toss!

Our Lady of Weight Loss promises that there’s plenty of taste and fat from the feta, so no need for oil dressings. Try it! You’ll like it!

Beatific Baby Spinach and Apple Salad

Ingredients:
2 (6 ounce) packages fresh baby spinach
1 medium sweet apple, chopped
1/3 cup raisins
3 tablespoons chopped peanuts, raw (not salted or roasted)
1 tablespoon extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon mango chutney
3/4 teaspoon curry powder
sprinkle of salt

Instructions:
In a large bowl, combine the spinach, apple, raisins and peanuts.
Then, simply, combine the remaining ingredients in a tight-fitting jar. Shake it up, baby! Drizzle over salad and toss.

Best EVER Fruit Salad

Ingredients:
2 medium sweet apples, chopped
2 nectarines, pitted and chopped
2 plums, pitted and chopped
1/3 cup raisins
1 cup green grapes, no pits please!
1 container of raspberries (organic frozen if you can’t find fresh)
juice of 1 fresh lemon
drizzle honey (not so much)

Instructions:
In medium sized bowl mix together all the fruit.
Then the juice of the one lemon and the drizzle of honey.
Toss.
