JigSaw Sunday: The Modern Day Empress pregnant with possibility, armed with an eggplant and fish recipe!

This week’s GET JIGGY SUNDAY WEIGHT LOSS JIGSAW PUZZLE in inspired by “The Empress,” one of the major arcana cards in the Tarot.

The traditional Empress is filled with love and pregnant with possibility, as is the Modern Day Empress!  However, the Modern Day Empress wears an orange overcoat as she rides the Blue Line with an eggplant and fish recipe readily available!!!

Remember, clicking your way through burns calories, keeps your mind busy and reminds you of your commitment to your healthy lifestyle!!!

And for those in need of an Eggplant and Fish Recipe, try this!

BAKED EGGPLANT & FISH from The Modern Day Empress
(cousin to Our Lady of Weight Loss, herself!)

Ingredients:

one pound of filleted fish (fillet of sole is good)
2 Tablespoons olive oil
one large Eggplant (or several small ones), baked until soft, scooped out
a few fresh tomatoes, chopped; or one can stewed tomatoes
half of one large or a small Vidalia Onion, chopped
capers (tablespoon or so)
vegetable broth, organic
cayenne pepper or red pepper flakes
black pepper, salt

 

Instructions:

Preheat oven to 350 degrees.

In a large skillet, heat olive oil.  When ‘spitting hot,’ sauté onions until soft.
Add scooped out eggplant, tomatoes, spices, and if needed (as in things are starting to burn, cause there’s not enough liquid in the pan) add a splash or two or even three of organic vegetable broth.  Toss in capers.  Add spices to taste.  Cook until all soft and flavors are folded and melded!

Layer fish over vegetables.  Some underneath, some on top of fish fillets.  Bake at 350 degrees with an aluminum tent over the fish … until flakey done delish.

    ilove eggplant recipes ,Janice.that’s one of my favorite.Thank you so much!I wonder if my dad wanna try this recipe when he comes home from Libya,lol.I love to cook for him Janice,anything!!!!And i am pregnant with many possibilities of attaining my goals,my dad said i’ll start from the smallest attainable goal,then little by little,without so much struggle,when i have the strategy of working out my goals,i ‘ll get there before i know it,this weightloss Janice is hard to attain,because the people around me loves to eat,and i just go to the motion.But,as my dad,said,begin working out my goal by first praying for it to God and then trusting God to help me,and of course,i need to do my part.thanks!
