Roasty, Toasty, & Crispy Chickpeas
Legumes don’t get the credit they deserve. Beans, peas, and lentils are low in fat, high in fiber and minerals, and an excellent source of protein. Treat them to a hot oven and you’ve got a mouth-watering healthy snack with a little kick to it.
Healthy Eating Tip: Spread canned lentils, chickpeas, or black beans on a prepared cookie sheet. Cooking spray or a sheet of parchment paper work well. Spritz or drizzle a little olive oil on top, salt, pepper, and chili powder (if you like it spicy). Roast legumes at a high heat in a 425 degree oven until crispy. You’ll love ‘em!
