Rainbow Cupcake Recipe
INGREDIENTS
White packaged cake mix (18-1/4-ounce box)
Food coloring (red, blue, green, and yellow)
Baking cups
White buttercream frosting (1 16 oz.can)
Rainbow striped candy strips. (Can be found at a bulk candy store or you can purchase online.)
DIRECTIONS FOR CUPCAKES
Prepare your favorite white cake mix, then divide the batter evenly among four small bowls. Add drops of food coloring to get desired color. Want some different colors? For puple mix blue and red. For orange, red and yellow.
Line a 16 muffin pan with baking cups. Evenly distribute the colored batter among the cups, one layer at a time. Do not mix. Be gentle and make sure to cover the previous layer completely.
Bake according to your cake mix recipe directions.
DIRECTIONS FOR FROSTING & DECORATION
Set aside a quarter of the white frosting.
Add blue food coloring to the white frosting, drop by drop until you get the desired shade of sky blue.
When cooled, frost the cupcakes with blue frosting.
Add a dollop of white frosting on each end.
Insert rainbow candy stripe
If desired, remove paper liner before serving.
EVEN EASIER TIP
Make cupcakes without the rainbow layers, but make each cupcake a different solid color.
