6 cups coarsely chopped cantaloupe, divided
3 Tablespoons honey, or to taste
2 cups fresh orange juice
1/3 cup fresh lime juice
2 cups brut champagne or white wine
fresh mint leaves
Finely chop 3 cups cantaloupe; mix with honey, and set aside. Puree remaining cantaloupe in batches with orange and lime juices in food processor or blender. Pour into large bowl; add champagne or wine and reserved cantaloupe. Cover and chill three to four hours. Serve in goblets or cantaloupe shells, garnished with mint leaves.
