  • 1-1/2 cups all-purpose flour

  • 5 eggs, beaten

  • 1-1/2 cups milk or half and half cream

  • 8 ounces cheddar cheese, grated

  • 1/8 teaspoon pepper

  • 1/4 teaspoon salt

  • 2 to 3 drops Tabasco sauce

  • 1 Tablespoon chopped parsley

  • 3/4 cup diced ham or cooked bacon

  • 1/3 cup chopped green bell pepper

  • 1/3 cup chopped onion

Step 1:

Preheat oven to 350 degrees.  Combine flour and salt in medium bowl.  Cut in butter; add cheese.  Add cream and, using a fork, toss mixture until it barely holds together.  If mixture seems too wet, add another Tablespoon flour.  Do not overmix (ingredients must be mixed by hand).   

Step 2:

Form into a ball and roll out on lightly floured board.  Place dough in a nine-inch deep-dish pie plate.  Fold edges under to form a standing, thickened rim.  Flute edges.  Combine all filling ingredients, mixing well.  Pour into pastry shell.  Bake 50 to 60 minutes, or until a knife inserted into the center comes out clean.  Let sit ten minutes out of oven and serve.
