After you whip up this amazing Raisin Bread Pudding, I’m betting that you will love it and feel simply smart and sassy!

Simply Smart and Sassy Raisin Bread Pudding

Ingredients:

3 slices raisin bread, crust removed, cut into cubes
3 cups fat-free Half-n’-Half
3 eggs, large
1 tablespoon of sugar
1 teaspoon vanilla extract

Instructions:

Preheat oven to 350 degrees.

Spray a one-quart souffle dish with Pam or whatever cooking spray you like best!
Layer the bread in the bottom of the dish.
Slowly, with love in your heart, and 1 1/2 cups of Half-n’-Half.

In a large bowl, beat the eggs lightly.
Add the remaining Half-n’-Half
Then the sugar and vanilla and blend.  With a big spoon or even clean hands!  Go for it!
Strain the egg mixture through a fine sieve over the bread cubes.

Place the souffle dish in a larger baking pan.
Fill the pan with hot water to come about halfway up the souffle dish.
Bake in the preheated 350 degree oven for 35 minutes or until the pudding is firm.

Serve hot or cold.

5 YUMs!

Spread the word … NOT the icing!
