Based on past Thanksgivings, I guarantee you that there will be leftovers.
So … In addition to planning my Thanksgiving day recipes (see my last Friday’s Sweet Potato Recipes!!!), I am gathering and trying out leftover recipes!
If you’ve got any great recipes, please post them! And do try today’s …
TURKEY TACO PIZZA because it is a 5-Yum post-Thanksgiving recipe if ever there was one!

Enjoy!!!
Ingredients:
2 whole wheat pita bread rounds, split horizontally
1 tablespoon olive oil
left over turkey – shredded or diced or chopped (up to you)
1/4 cup salsa (hot, medium – whatever level of spicy you like it)
3/4 cup reduced fat Cheddar Cheese (or any cheese you like best in your taco!)
1 cup shredded lettuce (or more or less)
1 cup chopped tomato
1 cup reduced fat sour cream
Instructions:
Preheat oven to 425 degrees F.
Place pita bread (horizontally sliced), open side up on baking pan.
Brush with olive oil. Bake for about 3 or 4 minutes, until lightly browned and crisp.
While baking, in a medium size bowl, mix together turkey and salsa.
Take pita bread halves out of the oven.
Spoon the turkey mixture evenly and artistically over pita halves.
Sprinkle with cheese.
Bake for about 5 minutes more until it is heated and the cheese has melted.
Top with lettuce and tomato pieces.
Place a few teaspoons of sour cream on each one.
Serve!!!
Fabulous! Under 300 calories per serving.
YUM. YUM. YUM. YUM. YUM. … 5 YUMS.
