British chef, Jamie Oliver was awarded the $100,000 Ted Prize last week, and with it “one wish to change the world.” His extraordinary 18 minute presentation is well worth watching. Jamie’s presentation will move you and perhaps scare you into action. It begins with these words. “Sadly, in the next 18 minutes, 4 Americans will be dead from the food they eat.” Jamie’s wish: “I wish for your help to create a strong, sustainable movement to educate every child about food, inspire families to cook again and empower people everywhere to fight obesity.” He also said that, “If one person teaches three people how to cook something, and they teach three of their mates, it only to repeat 25 times and that’s the whole population of America.”So … here I am, wondering how I might join with Jamie’s worthy cause!And it occurred to me that I can easily share a recipe, as I give everyone a nudge, a poke and a friendly Kick in the Tush, encouraging us all to get back into the kitchen, cook healthy meals, and spread the healthy word. I chose this recipe, because it is healthy and low-cal!!! It’s from my book, All Is Forgiven, Move On (Required reading for anyone who wants to permanently remove those excess pounds! NOT for someone is planning on losing them and finding them again!!!)Sinfully Delicious Portobello Mushrooms and Goat CheeseServings: 4Ingredients:4 large portobello mushroom caps1 cup marinara sauce (homemade if you can muster up the time and energy; if not read the labels and do NOT buy a jar that is loaded with salt, fat and sugar!!!)4 ounces reduced-fat goat cheese, cut into 1 ounce pieces 2 tablespoons finely chopped pitted black olives1 tablespoon finely chopped parsley1 tablespoon finely chopped chivesInstructions:1. Preheat oven to 375 degrees.2. Clean the mushroom caps with a damp towel, and with the help of a small spoon, scrape out the gills. Set the mushrooms aside.3. Spread the marinara sauce in the bottom of a 9″ x 9″ baking dish.4. Arrange the mushroom caps, gill side up, over the marinara sauce.5. Place 1-ounce of goal cheese on each mushroom.6. Sprinkle the olives, parsley, and chives over the mushrooms.7. Bake the dish uncovered for 30 minutes or until it is a hot and bubbly.Enjoy!
