Here’s an amazing and tasty cold salad recipe, so perfect for hot summer days.  It is so light in calories, but heavy with flavor.  I first encountered it in Greece, while filming my upcoming movie, (info at www.mysteriesoftheJesusPrayer.com).  The Greeks love this traditional salad that has both sweetness from watermelon, sour from balsamic vinegar, and saltiness from a sprinkle of feta cheese.  There is also a bit of thinly shaved red onion, which somehow magically pulls all the flavors together.  Try this one!  It’s unusual, low calorie, and delicious.
Dr. Norris J. Chumley’s Greek Watermelon Salad
Serves 4
4 cups watermelon (seedless is nice, or de-seeded, red, yellow – pick your favorite)
½ cup crumbled feta cheese (low sodium variety, if available)
1 red onion, sliced paper-thin
1/8-1/4 cup balsamic vinegar
optional: shredded fresh mint leaves, or arugula leaves
Cube the watermelon into bite-sized pieces and take out the seeds, if necessary.  Place in a big bowl, and sprinkle the feta cheese over it.  Add the sliced onion.  Drizzle the balsamic vinegar over everything and lightly mix and serve either cold or ideally at room temperature.
