I’m so proud of you for joining us here today for the 38th day of the Give-Back Diet weight loss plan.  A central feature of this program is limiting (or eliminating) added sugar and carbohydrates.  We’re also all about eating a balanced food plan, which means for a lot of us, adding more vegetables and fruit.  That’s what today’s all about – adding fruit to the program.

With the goal of fruit and less sugar (or none), here’s a favorite recipe of mine for you.  It’s as easy as can be!  dEE, this one’s for YOU!

Dr. Norris Chumley’s Bananas Foster
Serves 2

2 ripe bananas (the riper the better)
½ teaspoon vegetable oil
a sprinkling of cinnamon
½ teaspoon stevia (optional)
¼ cup rum (optional – or white cooking wine)
low-fat or no-fat frozen yogurt (no-sugar) 1 small scoop per serving

In a skillet, heat the oil slightly and add the rum or wine, if you’re using it.  Simmer on medium heat until it is almost boiling, and let it reduce for a few minutes.  Add the bananas, and stevia, if you’re using it.  Cook until the bananas are nice and soft.  Spoon the mixture over the frozen yogurt and serve immediately.  First, of course, say a prayer of thanks, or a moment of silence.

This is a recipe that was supposedly invented in a New Orlean’s restaurant named Brennans – so let it also be in honor of the city and the New Orleans Saints who won this year’s Super Bowl!
