A couple of our readers shared their love of cooking fish for us. Merk, shared two recipes for fish last month.  These look great.  See if you like them.

Blackened Tilapia

INGREDIENTS:
4-6 Tilapia Filets
2 Tbsp paprika
2 tsp salt
2 tsp lemon pepper
1.5 tsp garlic powder
1.5 tsp ground red pepper
1 tsp onion powder
1 tsp dried thyme
1-2 Tbsp olive oil

TO PREPARE: Mix all seasonings in bowl. Rub the seasonings on the fillets. Heat skillet and add olive oil. Place fillets in hot skillet and cook 2 minutes on each side. You will have a lot of seasoning mixture left for future use. I stored mine in an old oleo tub labeling the lid. It keeps well in the cupboard and is useful for a making a quick meal when time is short. I have also used it on other varieties of fish, such as blue hake.

Healthful Halibut
For a beautiful change of pace, try halibut.

INGREDIENTS: Halibut, 4 pieces
1 Tbls soy sauce
1 tsp fresh squeezed lemon or cheat with Real Lemon
2 Tbls olive oil Salt and pepper
Fresh asparagus, washed

TO PREPARE: Marinate 4 pieces for 30 minutes in 1 tablespoon soy sauce, 1 teaspoon fresh squeezed lemon, 2 tablespoons olive oil and salt and pepper to taste. Grill on medium high, 3 to 4 minutes per side. Then throw on the grill asparagus lightly seasoned with olive oil and salt, turning occasionally.

Thanks, Merk!  Fish is a really good food to eat: it’s low fat, full of good protein, high in Omega 3 oils, and very delicious to eat.

Kathleen of Oz (Austrailia) shared an easy baked fish recipe; here it is.

For each fillet, place in the middle of a large-ish square of tin foil (roughly 40cm x 40cm) On top of the fish place sliced lemon, a bit of lemon juice, crushed garlic, a small knob of butter, salt and pepper to taste. Close the foil around the fish, leaving space but closing tightly. Place in a medium hot oven for about 10 – 15 minutes. Check that the fish is cooked through. Plate and enjoy! (Serve with steamed veges).
