I admit it.  I usually encountered cabbage only in coleslaw which was  never a favorite of mine.  After reading about the amazing health benefits of this much maligned veggie, I decided to change that. I experimented last night and came up with this side dish which tasted pretty good and looked gorgeous.  I loved the bright purple, especially since I know that it is cancer-preventing phytochemicals that give cabbage its color.  Here is a side dish that I’m planning to fix often.

Ingredients

1 1/2 tablespoons coconut oil

1/2 head purple cabbage, chopped

1 apple, chopped

dash of cinnamon

Directions

Melt the coconut oil in a large skillet.  Add the cabbage and cook for a couple of minutes. Add the apple and the dash of cinnamon.  Cook until the cabbage and apple are tender.

This side dish is easy to fix, packed with nutrients, and very low glycemic.  Enjoy!
