I saw this on a poster intended to be funny, but it’s actually true!  While you are going about your business, your “autopilot” is busy taking care of the business of keeping you alive.  Lots of things are happening at the cellular level.

When you eat food that is easily digested, a huge load of sugar is dumped into your bloodstream. The autopilot sends out a message to the pancreas to pump out lots of insulin to take care of it.  The insulin has the “key” to let the sugar into the cell and gives the message, “Here’s the fuel — store it up and don’t waste it.  Make fat.”  The cells comply and stuff the sugar in. Your body gets the message to store fat and slow down to keep it on reserve.

So if you eat high-glycemic food, you are giving the message to your cells to store fat, and after awhile those cells get really good at it.  Everything you eat seems to turn to fat and it is tough to get it off.

So if you want your body to comply and stay slim, don’t give it the wrong message!  Feed it foods that are low glycemic. These foods digest slowly and the fuel is released gradually into the bloodstream, so you can avoid the sugar dump and the insulin rush.  The three things that digest slowly are protein, fiber, and fat.  Yes, fat.  More about fats – the good, the bad, and the ugly, in tomorrow’s post.
