Breakfast is an important meal — maybe the most important one you’ll eat all day. But, what can you eat?  You aren’t eating high glycemic bagels anymore, and we aren’t even talking about doughnuts.  Most cereals are on the yellow or red list.

But, yes, there are things you can eat.  How about a Funny Egg Wrap?

  • Start with a whole wheat tortilla, warmed in the microwave for 10 seconds or so.
  • Spread with one wedge of  The Laughing Cow® light cheese
  • Top with an egg fixed to your preference — poached, scrambled or boiled.
  • Add a dash of salsa or hot sauce, if you like.
  • Roll up and enjoy.
