The breakfast burrito has become a popular item on restaurant menus. We don’t think the egg burrito is just for breakfast anymore - though we do love one first thing in the morning. A burrito starts with either a corn or flour tortilla. Scrambled eggs make a great burrito filler and can be teamed with cheese for calcium, veggies for fiber, and meat for added protein and flavor. Wrapping your meal in a tortilla is a nice light way to limit carbs and still get the taste of a sandwich. Beans, rice or potatoes can be served on the side or go all-in and make your burrito as big as your plate!
