INGREDIENTS:

  • 1 head cauliflower or 2 packages frozen cauliflower
  • Boiling water
  • 4 tablespoons olive oil
  • 1/4 clove garlic, minced
  • 1/2 teaspoon salt
  • 1 cup chopped, peeled tomatoes
  • 1/4 cup Parmesan cheese
  • Chopped parsley
TO PREPARE:

Cook cauliflower in small amount of boiling water, covered, for 10 minutes.  Heat oil in skillet; saute garlic, add tomatoes, salt and well-drained cauliflower.  Sprinkle with Parmesan cheese.  Garnish with chopped parsley when served.

SERVES: 4
