As I am about to head up to Rowe, Massachusetts this morning to teach my weekend workshop entitled “Feed Your Soul: Change Your Weight,” and I am thinking, “What can I pack for the train ride? For lunch, for a snack?”

As you know (and maybe resist doing???), being prepared is a an important aspect to healthy weight management, and I am happy to report that I have a good deal of ingredients on hand! I am prepared!!! Glory Be.

I have some grapes, oranges, apples ready to go!  And after I post this delish blog-post, I am going to whip up one or two Banana Roll-Ups.  A major 5 yum happening!

Banana Roll-Up – Snack, Sandwich, Breakfast or Lunch !!! (2 bonus recipes below! Keep on scrollin’.)

Ingredients:

1 banana, peeled
1 small, 6 oz. corn tortilla
1 tablespoon natural peanut butter (if possible, grind your own!)
1 teaspoon honey

Directions:

Spread peanut butter and honey on tortilla.
Roll banana in tortilla and slice in half.

Hot off The Griddle Banana, Peanut Butter Sandwich

Ingredients:

non-stick cooking spray
2 tablespoons peanut butter
2 slices light bread
1 banana, sliced

Directions:

Heat a skillet or griddle over medium heat.  Coat with non-stick spray.
Spread 1 tablespoon of peanut butter onto each slice of bread.
Place banana slices onto the peanut buttered side of one slice.
Top with the other slice and press together firmly.
“Fry” the sandwich until golden brown on each side.  (2 minutes or so each side!)

Banana Banana Bread –  Open Face Sandwich

Ingredients:

1 banana
1/3 cup low fat ricotta cheese
1 Tbsp honey
1 slice banana bread

Directions:

In a small bowl, stir ricotta cheese with honey.
Spread mixture on top of slice of banana bread.
Place sliced bananas on top.
