This Best Ever Quinoa Berry Salad is – well – the best ever! An absolute MUST MAKE; a 5 Yum event if ever there was one.

Peter and I and the kids (who are hardly kids – but once a kid, always a kid) celebrated this past weekend our silver family anniversary – 25 glorious years together.

Yes, a family anniversary, because they were there, too, and it marked not just the date of our marriage, but the date of the start of a new family.

Our son and daughter-in-law drove up for the occasion.  They loaded their car not just with fancy clothes for the celebratory dinner out, but also with food, food, healthy food!  YAY!!!

Knowing how busy these past few months have been with regard to my mother (see my Elder Care Blues posts), and my official status as the Dysfunctional Chef, they prepared a lunch fit for not just a silver anniversary, but gold!  Solid Gold! 🙂

While everything they brought was bursting with flavor, the highlight for me was the Quinoa Berry Salad.  Not only is it a 5 yum dish; not only is it beautiful and good for us, too … there’s almost no cooking involved!

Without further ado…

Best Ever QUINOA BERRY Salad

Ingredients:
1/2 cup dry quinoa
1 cup raspberries or strawberries or both! (We used both!!!!)
2 cups blueberries
1 to 2 tablespoons of balsamic vinegar
juice from one fresh and fabulous orange
Pinch of kosher salt
handful of almond slices

Directions:
1. Cook quinoa according to package directions.
2. While quinoa is cooking, wash fruit, slice strawberries, and place all in large bowl
3. Fluff cooked quinoa with a fork and add to large bowl with fruit. Combine.
5. Squeeze the juice of the orange over the quinoa mix.
6.  Drizzle the balsamic vinegar.
6. Gently mix again.
7.  Sprinkle almonds on as desired.
8.  Feel happy and healthy!
