Today’s Righteous Recipe from your favorite Dysfunctional Chef (that’s me) is pretty much guaranteed to be a major hit, and it’s been said that it gets the mojo juices flowin’. You dig? Are you picking up what I am putting down?
In other words, this Love Potion Pie is rated “R”. Righteous!
Be careful with whom you dish with!
LOVE POTION PIE (from Our Lady of Weight Loss, Miraculous and Motivational Musings from the Patron Saint of Permanent Fat Removal – a classic that cheers you on, motivates, inspires and provides a bounty of delish recipes – that has been on Oprah’s reading list for 3 summers running)
1 10-oz. refrigerated pizza crust (Pillsbury makes one that pops straight out its container!)
1 teaspoon safflower oil
1/3 cup low-fat sour cream
1 small shallot, minced
1- 5 oz. can fat free evaporated milk
2 large eggs, whites only
1 large egg
3 ripe medium sized tomatoes
salt n’ pepper to taste
1/2 cup shredded low-fat Monterey Jack Cheese
Preheat oven to 350 degrees
Coat baking pan with cooking spray
Shape dough into pan, pulling up along the sides (to form something that resembles a deep dish pizza pie)
Heat safflower oil in iron skillet and saute spinach until wilted.
Mix spinach, shallots and sour cream in one bowl.
In seperate bowl, whisk together (with vigor and a smile) milk, salt, pepper, egg whites and egg.
Stir in 1/3 cup milk mixture into spinach mixture.
Spoon into bottom of baking dish (on top of pizza crust that you have already artistically sculpted!).
Add layer of tomatoes, top with cheese.
Pour remaining milk mixture over cheese.
Place pie in oven.
Bake 45 minutes, or until set (light brown color).
Let stand 10 or 15 minutes before digging in!
