I never thought I’d say this, but I’m in love with Endive. Or Belgian Endive (is there any other than Belgian?). It’s crispy and crunchy, yet a vegetable and virtually calorie free.

I use it to replace crackers, bread and chips on my low carb diet.

I never thought I’d actually like it, but now that I’ve gotten into a habit of eating it daily, I love it.

Try it, you might get the habit, too.

Try it with peanut butter. Scoop out only one tablespoon, and with a small knife, spread it on an endive leaf. Taste the peanutty goodness, and the crisp cool crunch of the endive.

Try a piece with some cream cheese. Again, only a tablespoon, and divide it between many endive leaves.

Or hummus, Or fresh tomato bruscetta. Or olive tapenade.
