This is a cool and unique recipe, totally simple, super low calorie and absolutely low fat.  It’s sweet (peas) and sour (arugula), and you can eat a lot of it with no remorse whatsoever.
Dr. Norris J. Chumley’s Green Pea and Arugula Salad
Serves 2
½ cup fresh green peas  (raw or cooked)
2 cups fresh arugula greens, slightly shredded or whole-leaf
2 tablespoons flavored oil or flavored vinegar
Shell and rinse the peas, wash the arugula, and toss together.  I found some orange-flavored oil (only $5 a bottle, too).  Also, there are some amazing, inexpensive flavored vinegar – I discovered some raspberry balsamic that is delicious.  Also, pear-infused rice vinegar would be heavenly with this salad.
