Swedish Ginger Cookies Recipe

INGREDIENTS:

  • 1 cup butter or margarine
  • 1-1/2 cups sugar
  • 1 egg
  • 1-1/2 tablespoons grated orange peel
  • 2 tablespoons corn syrup or molasses
  • 1 tablespoon water
  • 3-14 cups flour
  • 2 teaspoons soda
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cloves

TO PREPARE:

1. Cream butter and sugar.  Add egg to this mixture and beat until fluffy.
2. Stir in orange peel, corn syrup or molasses, and water.  Mix well and set aside.
3. Sift together flour, soda, cinnamon, ginger, and cloves.  Stir into creamed mixture.
4. Chill one hour.
5. Roll dough to 1/8-inch thickness on lightly-floured surface. Cut dough into desired shapes with floured cookie cutter.
6. Place cookies one inch apart on ungreased cookie sheet.
7. Bake. Remove from cookie sheet while still warm.

Temperature: 375 degrees
Baking Time: 7 to 8 minutes

HINT:   
Decorate with sugar sprinkles or icing.

YIELD: 8 dozen
