  • 1 Tablespoon baking powder

  • 1/2 cup all-purpose flour

  • 1/8 teaspoon salt

  • 3 eggs, separated

  • 2/3 cup milk

  • 1/2 pound ricotta cheese


Sift dry ingredients and set aside.  Beat egg yolks until lemon colored.  Add milk and cheese to egg yolks.  Fold in dry ingredients.  Beat egg whites until stiff and fold into mixture.  Cook at once on a hot, greased griddle.  Serve with sliced strawberries, honey, or maple syrup.
