I did promise subscribers that I would bring into the blog some of the features they liked best about the newsletter, one of which was recipes. I don&#8217;t create recipes myself really (you know, I guess I do, like everybody who likes working with food, but I&#8217;ve never written one of them down).&nbsp;<\/p>\n<div><\/div>\n<p><span class=\"mt-enclosure mt-enclosure-image\"><img loading=\"lazy\" decoding=\"async\" alt=\"ani's.jpg\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/133\/import\/ani%27s.jpg\" width=\"110\" height=\"110\" class=\"mt-image-left\" style=\"float: left;margin: 0 20px 20px 0\" \/><\/span><\/p>\n<div>Anyway, I mostly pass recipes on, and I&#8217;d like to do that today with a &#8220;spinach scramble.&#8221; I enjoyed a version of this dish&#8212;<i>I enjoyed it&nbsp;<\/i><i>a lot<\/i>&#8212;at the beautiful <a href=\"http:\/\/www.stanfordinn.com\/\">Stanford Inn by the Sea<\/a>&nbsp;in Mendocino, California, when I was out there weekend before last for the <a href=\"http:\/\/www.1shoppingcart.com\/app\/?Clk=3211489\">Vibrant Living Expo<\/a>. And thanks to a <a href=\"http:\/\/www.twitter.com\/RawandFit\">Twitter contact<\/a>, I&#8217;ve been led to a video of this simple recipe done by the charming raw food chef Ani Phyo, author of <i><a href=\"http:\/\/www.amazon.com\/Anis-Raw-Food-Kitchen-Delectable\/dp\/1600940005\/ref=sr_1_3?ie=UTF8&amp;s=books&amp;qid=1251672221&amp;sr=8-3\">Ani&#8217;s Raw Food Kitchen: Easy, Delectable Living Foods Recipes<\/a>. <\/i>This is such a great dish because most kinds of breakfasts, other than the traditional bacon and eggs, are sweet. Think about it: yogurt, a muffin or scone, cereal (usually sweetened), fruit, a smoothie &#8212; all sweet. Sometimes you just wake up and want <i>food<\/i>, not dessert. This fills the bill in a delicious and healthy way.<\/div>\n<div><\/div>\n<div>Ani calls her recipe &#8220;Spanish Breakfast&#8221; and it&#8217;s done in two parts. Here&#8217;s all there is to it (the instructions are mine, deduced from the video):<\/div>\n<div><\/div>\n<div>&#8220;Love the Chicks Pate&#8221;<\/div>\n<div><\/div>\n<div>1 cup almonds, dry<\/div>\n<div>1\/2 cup sunflower seeds, dry<\/div>\n<div>1\/4 tsp. sea salt<\/div>\n<div>1 tsp. turmeric<\/div>\n<div>1\/2 cup filtered water<\/div>\n<div><\/div>\n<div>Blend the dry ingredients and spices until it&#8217;s a coarse meal; then mix in the water until you&#8217;ve created a paste.&nbsp;(By &#8220;dry&#8221; on the nuts and seeds, she means either soaked and then left to dry; or simply unsoaked. A lot of people like to soak nuts and seeds to make them more digestible and deactivate the enzyme inhibitors present in unsoaked nuts and seeds.)<\/div>\n<div><\/div>\n<div>&#8220;Spanish Scramble&#8221;<\/div>\n<div><\/div>\n<div>1\/4 cup cilantro<\/div>\n<div>1\/2 cup tomatoes, diced<\/div>\n<div>2 Tbls. scallions, chopped<\/div>\n<div>1 batch Save the Chicks pate<\/div>\n<div>Dash black pepper<\/div>\n<div>Salt&nbsp;<\/div>\n<div>1\/2 cup spinach per serving<\/div>\n<div><i><br \/><\/i><\/div>\n<div>Mix the cilantro, tomatoes, pepper and salt into the pate. Scoop a sizable &#8220;dip&#8221; of the Spanish Scramble onto a bed of spinach.
