And a Green Mock Cocktail to wash it all down!<br \/>\n<em>Corned Beef and Cabbage<\/em><br \/>\n<em>faToid: <\/em> 3 ounces of corned beef is approximately 210 calories \/ 70 calories per ounce.<br \/>\n<em>Ingredients<\/em><br \/>\n3 pounds corned beef brisket with spice packet<br \/>\n10 small red potatoes<br \/>\n1\/2 pound onions, very small wedges<br \/>\n5 carrots, peeled and chopped into bite sized pieces<br \/>\n1 large head cabbage, cut into small wedges<br \/>\n<em>Alternate spices<\/em><br \/>\n1 tablespoon coarsely ground black pepper<br \/>\n1 teaspoon ground allspice<br \/>\n2 bay leaves<br \/>\n2 teaspoons kosher salt<br \/>\n<em>Instructions<\/em><br \/>\nPlace corned beef in large pot or Dutch oven and cover with water.<br \/>\nSprinkle the spice packet that came with the corned beef. (If you purchased a corned beef without the spice packet, don&#8217;t panic!!!  See &#8216;Alternate spices.&#8217;)<br \/>\nCover pot and bring to a boil, then reduce to a simmer.<br \/>\nSimmer approximately 50 minutes per pound or until tender. (In this case approx. 2.5 hours!)<br \/>\nAdd whole potatoes, onions and carrots. Cook until the vegetables are almost tender.<br \/>\nAdd cabbage and cook for another 15 minutes.<br \/>\nRemove meat and let it rest, breathe, cool on the counter for about 15 minutes before slicing!<br \/>\n<strong>Tips<\/strong><br \/>\nSlice meat across the grain!<br \/>\nFor a pretty presentation, serve on platter with the vegetable circling the sliced corned beef.<br \/>\nSave the liquid and use as a &#8216;gravy.&#8217;  Drizzle over veggies et al!<br \/>\nAnd NOW for your GREEN DESSERT MOCKTAIL &#8230; Smoothie!<br \/>\n<strong>Strawberry-Kiwi Smoothie<\/strong><br \/>\n<em>Ingredients<\/em><br \/>\n1 Cup Strawberry-Kiwi <a href=\"http:\/\/www.drinkhint.com\/\">HINT<\/a> (<a href=\"http:\/\/www.drinkhint.com\/\">Hint<\/a> is a water drink that comes in a variety of flavors)<br \/>\n1 Scoop lime sherbet<br \/>\n1 Generous Pinch of mint leaves<br \/>\n1 Strawberry<br \/>\n4 Kiwifruits, peeled and halved (very high in potassium!!! and delicious)<br \/>\n1 Cup crushed ice<br \/>\n<em>Instructions<\/em><br \/>\nBlend the following ingredients in a blender and serve.<br \/>\n<strong>St. Patrick&#8217;s Day Links<\/strong>:<br \/>\n<a href=\"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/2009\/03\/irish-stew-better-than-vegetab.html\">Lamb Stew: Better than Vegetable Soup<\/a><br \/>\n<a href=\"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/2009\/03\/go-green-the-st-patrick.html\">St. Patrick&#8217;s Day JigSaw Puzzle<\/a>!
