In celebration, I&#8217;d like to share my favorite 100 calorie pancake recipe with you, as well as a few tips on how to make the best pancake ever!!!<br \/>\n<strong>Ingredients:<\/strong><br \/>\n1-1\/4 Cups Flour (Whole Wheat preferable!!!)<br \/>\n1 Teaspoon Baking Soda<br \/>\n1 Tablespoon Raw Sugar<br \/>\n1 Cup 2% Milk<br \/>\n1 egg; 2 egg whites<br \/>\n1 Tablespoon Vanilla Extract<br \/>\n<strong>Instructions:<\/strong><br \/>\nPreheat your skillet over a medium heat, and spray with cooking spray.<br \/>\nWhile it is heating, in medium sized bowl, mix together:<br \/>\nFlour, baking soda, and sugar!  Put aside.<br \/>\nBeat together milk, eggs and the vanilla.<br \/>\nThen fold it into the dry ingredients.<br \/>\nNow, <strong>here&#8217;s my little &#8216;dirty&#8217; secret<\/strong>.  Take a teaspoon of real butter and add to the skillet!  A little butter is okay, as long as you don&#8217;t go haywire!<br \/>\nThen with ladle, scoop out the mixture onto the pan.<br \/>\nYou should get about 8 to 10 pancakes.<br \/>\n<strong>TIPS:<\/strong><br \/>\n<strong>Lumpy Batter is a Good Thing<\/strong>!  Stir the batter with a whisk or fork &#8211; but only until dry ingredients are blended. The batter should be lumpy!<br \/>\n<strong>Over mixing makes for a tough pancake!<\/strong><br \/>\n<strong>The griddle needs to be the right temperature.<\/strong>  Sprinke a few drops on it, and if dance the Bunny Hop, then it&#8217;s good to go!<br \/>\n<strong>Cook pancakes until one side is full of bubble. <\/strong> Then turn.<br \/>\nTurn only once!<br \/>\nEnjoy your holiday!!!<br \/>\n<strong>More de-LISH recipes from the Dysfunctional Chef, Janice Taylor.<\/strong><br \/>\n<a href=\"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/2008\/03\/janice-taylor-dysfunctional-ch.html\">Dysfunctional Chef VIDEO!!!<\/a> Amazing fig sauce.
