Q:<\/strong>\u00a0 How amazing and magical is it when someone (a good friend, neighbor or even a relative)<\/em> shows up at your front door with a bowl of somethin’ special that she (or he)<\/em> has just whipped up to share with you–that is not only delish, but healthy as well?<\/p>\n

A:<\/strong>\u00a0 Very amazing! \ud83d\ude42<\/p>\n

I am happy to report that when our dear friend, Betsy, surprised us (DH and me) with a bowl of her famous (in these here parts)<\/em> Gazpacho!\u00a0 I asked if I could share the recipe and Betsy said, “Sure! FYI…it’s a variation of the South Beach Gazpacho.<\/a>”<\/p>\n

Without further ado, here is Betsy’s recipe, which I highly recommend, as does DH!\u00a0\u00a0 It was a spoon-to-spoon fight to the finish.\u00a0 Loved it!!!<\/p>\n

BETSY’S GAZPACHO:<\/strong><\/p>\n

Ingredients:<\/strong>
\n1 largish bell pepper, red or green, diced
\n1 cucumber, peeled and seeded, diced
\n3 stalks celery, diced
\n1\/2 – sweet onion, diced
\n1 clove garlic, diced (optional-Betsy did add, but no more than one clove)
\n14.5 oz. can diced tomatoes, pettit, w. juice
\n2 1\/2 cups of V8 juice (regular) chilled
\n3 T. white vinegar
\n2 T. olive oil
\nWorcestershire to taste
\nSea salt to taste (optional-Betsy did not add)<\/p>\n

Directions:<\/strong>
\nIn large bowl, mix all ingredients together.
\nChill.
\nServe.<\/p>\n

Note:\u00a0<\/strong> Betsy diced everything into little squares.\u00a0 It was crunchy. Delicious! Heavenly! Fabulous!<\/p>\n

DIET TIP:<\/strong>\u00a0\u00a0 For those who are “nighttime” eaters, consider this as your nighttime snack!\u00a0 Chow down guilt-free!<\/p>\n
