pasta for four!<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1.5 pounds Italian plum tomatoes (Roma)<br \/>\n1 can (14 or 15 oz) Tomatoes, diced in Italian seasonings or plain<br \/>\n1 pound eggplant, cut into 1\/2 inch cubes (approximately, like I got the ruler out and measured)<br \/>\n1.5 cups sweet onion (Vidalia is always a good idea)<br \/>\n3 mediums ribs of celery, cut long-wise in half and then into 1\/4 inch slices<br \/>\n3 medium garlic cloves, minced<br \/>\n1 tablespoon uncooked instant or quick-cooking tapioca<br \/>\n1 tablespoon sugar<br \/>\n1\/2 teaspoon salt<br \/>\n1 tablespoon red pepper flakes<br \/>\n1 (6 oz) can of Tomato paste<br \/>\n10 medium to large pimento-stuffed, pitted, green olives<br \/>\n2 tablespoons capers, drained<br \/>\n1\/2 cup fresh basil, finely chopped<br \/>\n3 tablespoons red wine vinegar<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Spray slow cooker with cooking spray.<br \/>\nUsing half of each ingredient layer as follows:<\/p>\n<p>Fresh tomatoes, canned tomatoes, eggplant, onion, celery, garlic.<br \/>\nSprinkle half of the tapioca, sugar, salt, red pepper<br \/>\nRepeat (two layers).<\/p>\n<p>In small bowl, whisk together the tomato paste and red wine vinegar.<br \/>\nPour over the top layer (or spoon over the top layer)<\/p>\n<p>Cook on low for 4 hours.<br \/>\nStir the vegetables and recover the slow cooker, for another 4 hours on low!<\/p>\n<p>Stir in the olives and the capers.<br \/>\nLet sit for 1\/2 hour or so, on warm or off.<br \/>\nSprinkle with basil before serving!<\/p>\n<p>Seriously fabulous dish that provides a good amount of vegetables to your daily plan!<br \/>\nEat this: Lose weight!!!<\/p>\n<p>For more 5 yum delish recipes, support and giggles, visit our <a href=\"http:\/\/maildogmanager.com\/lptrack.html?OurLadyofWeightLoss::670::http:\/\/www.facebook.com\/groups\/30757154492\/\" target=\"_blank\">Facebook\/Kick in the Tush Club <\/a>chapter.<\/p>\n<p><strong>LAST CHANCE to fill up on HAPPINESS!\u00a0 Sign up for my workshop at Rowe Camp &amp;
