{"id":4683,"date":"2013-03-16T09:51:59","date_gmt":"2013-03-16T13:51:59","guid":{"rendered":"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/?p=4683"},"modified":"2013-03-16T09:51:59","modified_gmt":"2013-03-16T13:51:59","slug":"dysfunctional-chef-deviled-mexican-eggs","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/ourladyofweightloss\/2013\/03\/dysfunctional-chef-deviled-mexican-eggs.html","title":{"rendered":"Dysfunctional Chef: Deviled Mexican Eggs"},"content":{"rendered":"<p><img decoding=\"async\" class=\"alignright size-medium wp-image-4402\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/100\/2012\/12\/dysfunctional-chef-copy-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" \/>I was thrift shopping and found an &#8220;deviled egg tray&#8221; in the &#8220;fancy&#8221; cabinet that holds all the really prized and expensive household items.\u00a0 It was marked $18, which I thought was crazy high for the corner thrift store; and I could probably buy a new one for that price, so I bargained, and haggled my way to less than half the price!\u00a0\u00a0 I just had to make deviled eggs and since I am in Tucson this week, why not make &#8217;em Southwest\/Mexican style!<\/p>\n<p>Unbelievably delish!!!\u00a0 Friends came over and they lasted about three seconds.\u00a0 I am glad I tasted (more like spooned and licked the &#8220;deviled batter,&#8221; cause the tray was empty before it reached me, which delighted my &#8220;hostess with the mostest&#8221; soul!<\/p>\n<p><strong>MEXICAN DEVILED EGGS<\/strong><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<p><strong>10 hard-cooked eggs<\/strong>, peeled\u00a0 (the tray held 16 deviled eggs or 8 eggs, BUT I figured that I&#8217;d destroy at least two egg whites, so I made 10.\u00a0 I was pretty much right!<label><label><\/label><\/label><br \/>\n<strong>almost* 1\/4 cup reduced fat mayonnaise<\/strong>\u00a0 (<em>*almost-1\/4 cup looked like a lot; 1\/8 looked like too little, so I plopped whatever in the measuring cup to somewhere in between<\/em>)<label><label><\/label><\/label><br \/>\n<strong>almost 1\/4 cup organic yellow mustard<\/strong> (<em>I had organic in the fridge, so that&#8217;s what I used from Trader Joe, a delightful store that has so many intriguing items<\/em>.)<label><\/label><br \/>\na<strong>lmost 1\/4 cup sweet relish<label><label><\/label><\/label><\/strong><br \/>\n<strong>almost 1\/4 cup red onion, diced<label><label><\/label><\/label><\/strong><br \/>\n<strong>1\/2 to 3\/4 large avocado<\/strong> &#8211; peeled, pitted, and mashed (<em>I was going to put in 1\/2 an avocado, but it was there and I love it so, so I added a bit more<\/em>)<label><label><\/label><\/label><br \/>\n<strong>1\/3 jalapeno pepper<\/strong>, seeded and diced (<em>don&#8217;t get hot pepper seeds on your hands or your face.\u00a0 be super duper pow crazy careful<\/em>)<label><label><\/label><\/label><br \/>\n<strong>rock salt and ground black pepper<\/strong> to taste<label><label><\/label><\/label><br \/>\na tiny pinch of <strong>Chipotle chile pepper<\/strong> (on top of each deviled egg)<\/p>\n<p><strong>INSTRUCTIONS:<\/strong><\/p>\n<p>Hard boil the eggs.\u00a0 Cool &#8217;em and peel &#8217;em.\u00a0 Cut in half the long way (duh) and place on your fabulous egg tray.\u00a0 If you don&#8217;t have one, get one!\u00a0 They are FUN!\u00a0 Scoop out yokes in a small bowl)<br \/>\nIn a larger bowl, smash together the mayo, mustard, relish, onion, avocado, jalapeno pepper, salt n&#8217; pepper.
