Mellow Yellow Blend<\/strong><\/p>\n<p>Ingredients:<\/p>\n<p>2 cups (16 ozs.) cottage cheese (full fat, 2% fat, low fat &#8211; your call!)<br \/>\n4 egg whites<br \/>\n1 egg<br \/>\n2 cups fresh corn kernels (about two ears of corn)<br \/>\n4 cloves garlic, minced<br \/>\n2 tablespoons fresh chives, chopped<br \/>\n2 pounds yellow summer squash, sliced thin (1\/8&#8243; to 1\/4&#8243;)<br \/>\n1\/3 cup grated cheddar cheese (full fat, low fat, your call)<\/p>\n<p>Instructions:<\/p>\n<p>Drain cottage cheese.\u00a0\u00a0 Have you noticed that some brands of cottage cheese are looser or more liquidy (is that a word?) than others?\u00a0 I have!\u00a0\u00a0 So&#8230;if you feel it necessary, pull the mesh strainer out and set over a bowl for 30 minutes.\u00a0 With the cottage cheese in it, of course.\u00a0 Draining the liquid!<\/p>\n<p>Preheat oven to 350 degrees (while draining).<br \/>\nSpray 2-1\/2 quart casserole dish with Pam or the equivalent.<\/p>\n<p>In a large bowl, whip up the egg whites.\u00a0 Add the egg to it; continue to whip, and then stir in the drained cottage cheese.\u00a0\u00a0 Stir in corn, garlic and chives.\u00a0 Layer half of sliced squash on the bottom.\u00a0 Shake a bit of salt n&#8217; pepper on the squash.\u00a0 Cover with cottage cheese mixture.
