{"id":4546,"date":"2013-02-01T08:01:52","date_gmt":"2013-02-01T13:01:52","guid":{"rendered":"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/?p=4546"},"modified":"2013-02-01T08:01:52","modified_gmt":"2013-02-01T13:01:52","slug":"dysfunctional-chef-shrimp-ceviche","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/ourladyofweightloss\/2013\/02\/dysfunctional-chef-shrimp-ceviche.html","title":{"rendered":"Dysfunctional Chef:  Shrimp &#8220;Ceviche&#8221;"},"content":{"rendered":"<p><img decoding=\"async\" class=\"alignright size-medium wp-image-4402\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/100\/2012\/12\/dysfunctional-chef-copy-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" \/>Ceviche (\u201cseh-BEE-chay\u201d) is an extremely popular dish in South America, whose basic ingredient is raw fish.\u00a0 Raw fish, cut into bite-sized piece, marinated in the juice of an acidic fruit (usually lime), salt and various seasonings.\u00a0\u00a0 The juice changes the texture of the fish and &#8220;cooks&#8221; the fish, either partially or completely, depending on how long the fish is marinated.<\/p>\n<p>The citric acid from the juice does make the fish more firm and opaque, as cooking with heat does, but the acid does not kill the bacteria or the parasites as effectively as heat does.\u00a0 That said, while I find the idea of making my own ceviche at home appealing, I also recognize the fact that I am the Dysfunctional Chef and I best take the safe already cooked route!<\/p>\n<p>Here is a fabulous &#8220;faux&#8221; Ceviche recipe ever!<\/p>\n<p><strong>INGREDIENTS<\/strong>:<\/p>\n<p>1 lb. cooked medium shrimp, cut in half lengthwise<br \/>\n1 medium tomato, chopped<br \/>\n1 avocado, chopped<br \/>\n1 serrano chile, halved, seeded and sliced<br \/>\n1\/2 English cucumber, peeled and chopped<br \/>\n1\/3 cup red onion, chopped<br \/>\n1\/3 cup cilantro, chopped<br \/>\n1\/2 teaspoon dried oregano<br \/>\njuice of 1 lime<br \/>\n1\/2 cup crumbled feta cheese<br \/>\n4 cups of mixed greens<\/p>\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n<p>Mix together everything, with the exception of the mixed greens, in medium bowl.\u00a0 Let stand for 15 minutes.\u00a0\u00a0 Plate 1 cup of greens per serving, then place shrimp &#8220;cerviche&#8221; on top.<\/p>\n<p><strong>NOTES<\/strong><strong><\/strong><\/p>\n<p><strong>Serrano chiles are hot!\u00a0<\/strong> Be uber-careful when cutting.\u00a0 Put gloves on.\u00a0 Don&#8217;t let those seeds get on your fingers; don&#8217;t let your fingers spread the &#8220;hot&#8221; to your face.\u00a0 I did once!
