{"id":4105,"date":"2012-09-24T11:39:37","date_gmt":"2012-09-24T15:39:37","guid":{"rendered":"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/?p=4105"},"modified":"2012-09-24T11:43:12","modified_gmt":"2012-09-24T15:43:12","slug":"recipe-healthy-eating-matters-mozzarella-tomatoes-and-the-virgin","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/ourladyofweightloss\/2012\/09\/recipe-healthy-eating-matters-mozzarella-tomatoes-and-the-virgin.html","title":{"rendered":"(Recipe) Healthy Eating Matters &#8211; Mozzarella, Tomatoes and the Virgin"},"content":{"rendered":"<figure id=\"attachment_3816\" aria-describedby=\"caption-attachment-3816\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/files\/2012\/06\/antioxidant-girl-040411.jpg\"><img decoding=\"async\" class=\"size-medium wp-image-3816\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/100\/2012\/06\/antioxidant-girl-040411-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" \/><\/a><figcaption id=\"caption-attachment-3816\" class=\"wp-caption-text\">Antioxidant Girl to the Rescue by Janice Taylor, Life\/Wellness Coach, Weight Loss Artist<\/figcaption><\/figure>\n<p>One of my favorite dishes is fresh mozzarella with tomatoes and basil.\u00a0 It is to die for good, especially when you get seriously fresh mozzarella.<\/p>\n<p>Back in the day, my high school friend and I would visit her uncle in Little Italy.\u00a0 He owned a shop and during our visits he generously offered up mozzarella so fresh that it was still warm.\u00a0\u00a0 I kind of got spoiled.\u00a0 Once you go fresh, it&#8217;s difficult to return to packaged goods.<\/p>\n<p>Not only was the mozzarella oozing with freshness, but the tomatoes and basil were straight from the garden.<\/p>\n<p>This <em><strong>Mozzarella, Tomatoes, Virgin &#8220;Salad&#8221;<\/strong><\/em> is a variation on that theme.\u00a0 I wanted to mix it up a bit; add more tomatoes (antioxidant girl told me to), a layer of avocado (got to love those good fats), and mix up a batch of virgin oil and balsamic vinegar to drizzle on.\u00a0 Less is more.\u00a0 Really!<\/p>\n<p>This MT&amp;V Salad makes for a satisfying and refreshing lunch!<\/p>\n<p><em><strong>Ingredients<\/strong><\/em><\/p>\n<div>\n<div>1\/3 cup balsamic vinegar<\/div>\n<div>2\/3 cup virgin olive oil<\/div>\n<div>4 whole Garlic clove, finely chopped<\/div>\n<div>1\/3 cup finely chopped fresh basil leaves<\/div>\n<div>8 whole Fresh medium tomatoes<\/div>\n<div>1\/2\u00a0 avocado, ripe, cubed<\/div>\n<div>1\/4 lb. part-skim mozzarella cheese, thinly sliced<\/div>\n<div>1 dash salt<\/div>\n<div>1 dash black pepper<\/div>\n<\/div>\n<p><em><strong>Instructions<\/strong><\/em><\/p>\n<p><em>DRESS IT:<\/em> Pour the balsamic vinegar into a bowl and slowly whisk in the olive oil. Once the two are incorporated into each other (no separation), stir in the finely chopped garlic and basil leaves.\u00a0 A few shakes of salt n&#8217; pepper ought to do it.<\/p>\n<p>Utilizing a sharp knife (dull is seriously dull), remove the stem ends from the tomatoes. Slice the tomatoes into small wedges and place in a large salad bowl.<\/p>\n<p>Cut the 1\/2 of your avocado into cubes.\u00a0 (FYI &#8230; 1\/2 of a medium sized avocado is approx. 140 calories.)\u00a0 Add avocado cubes to the tomatoes.
