{"id":2733,"date":"2011-09-02T12:19:17","date_gmt":"2011-09-02T16:19:17","guid":{"rendered":"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/?p=2733"},"modified":"2011-09-02T12:25:17","modified_gmt":"2011-09-02T16:25:17","slug":"dysfunctional-chef-presents-septembers-cheap-n-easy-eats","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/ourladyofweightloss\/2011\/09\/dysfunctional-chef-presents-septembers-cheap-n-easy-eats.html","title":{"rendered":"Dysfunctional Chef presents September&#8217;s Cheap n&#8217; Easy Eats"},"content":{"rendered":"<p>Want to eat healthy and save money?\u00a0 Then buy &#8216;seasonal foods.&#8217;\u00a0 It makes perfect sense.\u00a0 When foods are in season, they are plentiful and, therefore, cost less.\u00a0 It&#8217;s the ole supply n&#8217; demand theory.<\/p>\n<p>Here follows a list of what&#8217;s in &#8220;September Season,&#8221; followed by one of Our Lady of Weight Loss&#8217;s favorite Kick Tush Recipes from her classic &#8211; <a href=\"http:\/\/www.amazon.com\/All-Forgiven-Move-Fat-Burning-Sveltesville\/dp\/014200524X\/ref=pd_bbs_sr_1?ie=UTF8&amp;s=books&amp;qid=1197052667&amp;sr=1-1\">All is Forgiven, Move On<\/a>!<\/p>\n<p><strong>Seasonal Fruits and Vegetables for September:<\/strong><\/p>\n<p>Apples<br \/>\nArtichokes<br \/>\nBlackberries<br \/>\nBlueberries<br \/>\nBroccoli<br \/>\nCabbage<br \/>\nCauliflower<br \/>\nCarrots<br \/>\nChile Peppers<br \/>\nCucumber<br \/>\nCurly Kale<br \/>\nFigs<br \/>\nFrench Beans<br \/>\nGarlic<br \/>\nHorseradish<br \/>\nLeeks<br \/>\nLettuce<br \/>\nMushrooms<br \/>\nNectarines<br \/>\nNew Potatoes<br \/>\nPeaches<br \/>\nPears<br \/>\nPlums<br \/>\nPumpkins<br \/>\nRed Onions<br \/>\nSpinach<br \/>\nSquash<br \/>\nSweet Corn<br \/>\nTomatoes<br \/>\n<em>And NOW for the recipe &#8230; a 5 Yum Event!<\/em><\/p>\n<p><strong>Walk on the Mild Side of Pasta!<\/strong><\/p>\n<p><strong>Servings<\/strong>: 4<\/p>\n<p><strong><br \/>\nIngredients<\/strong>:<\/p>\n<p>8 oz (2-2 1\/2 c) Farfalle pasta<\/p>\n<p>1 tsp extra virgin olive oil<\/p>\n<p>4 oz turkey sausage; cut into small pieces<\/p>\n<p>2 small shallots; minced<\/p>\n<p>10 oz frozen spinach; thawed and drained\u00a0 (when in season, feel free to use FRESH SPINACH; saute in a little bit of oil and extra virgin olive oil until wilted)<\/p>\n<p>0.5 tsp nutmeg<\/p>\n<p>1 tsp oregano<\/p>\n<p>1 tsp kosher salt<\/p>\n<p>0.5 ground black pepper<\/p>\n<p>1\/2 c low sodium chicken stock<\/p>\n<p>1\/4 c Parmesan cheese + 1 tbsp cheese to sprinkle on individual dish<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<ol start=\"1\">\n<li>Cook pasta according to package.<\/li>\n<li>While pasta is cooking, heat a large saut\u00e9 pan and add oil. Add turkey sausage pieces to the pan and cook until nicely browned.<\/li>\n<li>Add shallots, spinach, nutmeg, oregano, salt and pepper. Stir to combine and cook for a couple of minutes.<\/li>\n<li>Add chicken stock and Parmesan cheese.<\/li>\n<li>By now the pasta will be cooked. Save some of the cooking water. Drain (don\u2019t rise under water) and put pasta into the saut\u00e9 pan with the turkey sausage \/ spinach mixture. Toss well.
