{"id":2597,"date":"2011-07-15T13:24:19","date_gmt":"2011-07-15T17:24:19","guid":{"rendered":"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/?p=2597"},"modified":"2011-07-15T13:24:19","modified_gmt":"2011-07-15T17:24:19","slug":"dysfunction-chef-friday-pow-papaya-avocado-salad","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/ourladyofweightloss\/2011\/07\/dysfunction-chef-friday-pow-papaya-avocado-salad.html","title":{"rendered":"Dysfunction Chef Friday &#8211; Pow Papaya-Avocado Salad"},"content":{"rendered":"<p>Did you know that Christopher Columbus called papayas the \u201cfruit of the angels?\u201d\u00a0 True enough!!!\u00a0 And it\u2019s no wonder, because papayas are at the same time both deliciously sweet and musky.<\/p>\n<p>I\u2019ve been told that this spherical or pear-shaped fruit can grow as long as 20 inches (imagine that!), but the ones most commonly found in the local markets and in the street vendor carts in my neighborhood average a good 7 inches!<\/p>\n<p>Their flesh is most decidedly orange, and its inner cavity contains its black, round seeds encased in a gelatinous-like substance.\u00a0 <em>(For your Halloween folders? A good color combo.)<\/em>\u00a0 I understand that the papaya\u2019s seeds are edible, but somewhat peppery and bitter.\u00a0 As I write this, I realize that I\u2019ve not tried the seeds.\u00a0 Not terribly adventurous of me.\u00a0 Maybe next time?<\/p>\n<p>I have, however, made and eaten (with great enthusiasm) a papaya-avocado salad that I am happy to share with you today.<\/p>\n<p>I call it \u2026<\/p>\n<p><strong>Pow Papaya-Avocado Salad<\/strong><br \/>\n\u2026 because it delivers Super Duper Pow energy!<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>4 ripe papayas, small to medium<br \/>\n1 large, ripe avocado, skinned, pitted and diced<br \/>\n1\/4 cup raw cashews, chopped<br \/>\n1\/4 cup cilantro, chopped<br \/>\nlemon, juice from one fresh squeezed lemon<br \/>\n2 tablespoons shallot, finely chopped<br \/>\n1 cup baby arugula, chopped\u00a0\u00a0 (Younger leaves, known as baby arugula, are more tender and less pungent than the more mature greens.)<\/p>\n<p><strong>Instructions:<\/strong><br \/>\nHalve 2 papayas, scoop out the seeds (and toss them or try them, if you like \u2013 let me know how it goes J )<br \/>\nSet papaya halves aside.<\/p>\n<p>Halve the remaining papayas, de-seed, peel and then dice its \u2018meat.\u2019<br \/>\nPlace in large mixing bowl.<br \/>\nAdd the rest of the ingredients with the exception of the arugula.<\/p>\n<p>Toss to combine.
