The traditional Empress is filled with love and pregnant with possibility, as is the Modern Day Empress!\u00a0 However, the Modern Day Empress wears an orange overcoat as she rides the Blue Line with an eggplant and fish recipe readily available!!!<\/p>\n

BAKED EGGPLANT & FISH from The Modern Day Empress
\n(cousin to Our Lady of Weight Loss<\/a>, herself!)<\/strong><\/p>\n

Ingredients:<\/em><\/p>\n

one pound of filleted fish (fillet of sole is good)
\n2 Tablespoons olive oil
\none large Eggplant (or several small ones), baked until soft, scooped out
\na few fresh tomatoes, chopped; or one can stewed tomatoes
\nhalf of one large or a small Vidalia Onion, chopped
\ncapers (tablespoon or so)
\nvegetable broth, organic
\ncayenne pepper or red pepper flakes
\nblack pepper, salt<\/p>\n

 <\/p>\n

Instructions:<\/em><\/p>\n

Preheat oven to 350 degrees.<\/p>\n

In a large skillet, heat olive oil.\u00a0 When \u2018spitting hot,\u2019 saut\u00e9 onions until soft.
\nAdd scooped out eggplant, tomatoes, spices, and if needed (as in things are starting to burn, cause there\u2019s not enough liquid in the pan) add a splash or two or even three of organic vegetable broth.\u00a0 Toss in capers.\u00a0 Add spices to taste.\u00a0 Cook until all soft and flavors are folded and melded!<\/p>\n

Layer fish over vegetables.\u00a0 Some underneath, some on top of fish fillets.\u00a0 Bake at 350 degrees with an aluminum tent over the fish \u2026 until flakey done delish.<\/p>\n
