Served with a side of garlicky greens and quinoa, and you&#8217;ve got a 5 Yum Delish dinner that&#8217;s sure to impress.<\/p>\n<p>Here&#8217;s what you&#8217;ll need &#8211; a.k.a. the &#8230;<\/p>\n<p><strong>&#8230; INGREDIENTS<\/strong><br \/>\n<em><strong>ORANGE SALMON<\/strong><\/em><br \/>\n1 tablespoon freshly grated orange zest<br \/>\n2 teaspoons freshly grated ginger<br \/>\n1\/2 cup fresh squeezed orange juice (yes, from real oranges, not from a cardboard box!)<br \/>\n1\/2 cup low-sodium tamari<br \/>\n4 &#8211; 6-oz. salmon fillets *<\/p>\n<p>* When buying salmon, always opt for <em>wild-caught Alaskan varieties<\/em>.<\/p>\n<p><strong>INGREDIENTS<\/strong><br \/>\n<em><strong>GARLICKY GREENS<\/strong><\/em><br \/>\n1 tablespoon virgin olive oil<br \/>\n8 cloves garlic, minced<br \/>\n2 &#8211; 10-oz. packages fresh spinach<br \/>\n1\/2 lemon &#8211; juiced<\/p>\n<p><strong>INSTRUCTIONS<\/strong><br \/>\n<em><strong>ORANGE SALMON<\/strong><\/em><br \/>\nIn a zip-lock-top bag, combine orange zest, orange juice, tamari sauce.<br \/>\nAdd salmon to bag.\u00a0 Seal the bag.\u00a0 Jiggle it around, making sure salmon is covered.<br \/>\nKeep refrigerated for 30 mins.<\/p>\n<p>In the meantime &#8230; Preheat oven to 450 degrees.<br \/>\nWhen 30 mins have passed, remove fillets from bag and discard marinade.<br \/>\nPlace fillets skin side down on a shallow roasting pan.<br \/>\nRoast salmon for 13 minutes (more or less), until the fish flakes easily!<\/p>\n<p><strong>INSTRUCTIONS<\/strong><br \/>\n<em><strong>GARLICKY GREENS<\/strong><\/em><br \/>\nIn a large pan, heat oil over medium-high heat.\u00a0 Add minced garlic, brown a bit.<br \/>\nThen when softened, toss in spinach a bunch at a time.<br \/>\nAs it cooks down, add more &#8230; until it&#8217;s wilted.\u00a0 Then mix lemon juice throughout.<\/p>\n<p>If you want to make it pretty, put a 1\/2 cup of quinoa (cooked, of course &#8211; I didn&#8217;t have to say that, did I?) on the plate, salmon on top of that, spinach atop the salmon.<\/p>\n<p>Wowzer!
