Hypnotist, Author, Syndicated Columnist, Seminar Leader &amp; 50-pound Big-Time-Loser!<\/p>\n<div style=\"text-align: center\"><em>Fun Factoid: Thomas Jefferson is credited with introducing macaroni to the United States, he fell in love with a certain dish he sampled in Naples<\/em><\/div>\n<p>.<br \/>\nSome of you who are out there traversing the <em>Diet Jungle<\/em>, may have heard that carbs are &#8216;bad,&#8217; that pasta is &#8216;real bad,&#8217; and that if you want lose weight that you better lay off, steer clear of, give up pasta!<br \/>\n<strong>&#8220;Hogwash,&#8221;<\/strong> I say.  You can lose weight and have your pasta, too!<br \/>\nHere follow my three favorite all-time easy, healthy and fun whole wheat pasta recipes from Our Lady of Weight Loss&#8217;s Kitchen.  Yup, whole wheat!!!!  Healthy pasta.<br \/>\n<strong>Greek Pasta Salad<\/strong><br \/>\n<em>Ingredients: <\/em><br \/>\n1\/4 lb. dried whole wheat <a href=\"http:\/\/www.fiberwise.com\/\">Fiber Wise<\/a>* pasta, shell shaped<br \/>\n1 cup cherry tomatoes<br \/>\n1 cup cucumbers, de-seeded, sliced<br \/>\n1\/2 cup Green Pitted Colossal Greek Olives<br \/>\n4 oz. Feta cheese, crumbled<br \/>\n1\/4 cup green onions, sliced oh so thin<br \/>\n1\/3 cup olive oil<br \/>\nJuice from 1 fresh lemon<br \/>\n1 tablespoon parsley, finely chopped<br \/>\nBlack pepper to taste<br \/>\nSalt NOT necessary, as olives and feta cheese are salty enough!<br \/>\n<em>Instructions:<\/em><br \/>\nCook pasta according to package directions.<br \/>\nCombine with rest of the ingredients.  Fold, blend, mix gently.<br \/>\nMakes 4 to 6 servings<br \/>\n<strong>Italian Pasta Salad<\/strong><br \/>\n<em>Ingredients<\/em><br \/>\n1 box whole wheat<a href=\"http:\/\/www.fiberwise.com\/\"> Fiber Wise<\/a>* pasta spirals<br \/>\n1 jar roasted red peppers<br \/>\n2 cups broccoli florets, steamed (slightly)<br \/>\n1\/2 cup fresh basil, chopped<br \/>\n1\/2 cup parmesan cheese<br \/>\nvirgin olive oil, drizzle (1\/4 cup or less)<br \/>\nbalsamic vinegar (less than 1\/4 cup) to taste<br \/>\npepper<br \/>\n<em>Instructions:<\/em><br \/>\nCook pasta according to directions on box<br \/>\nSlice peppers into strips.<br \/>\nSteam Broccoli florets.<br \/>\nSteam broccoli, only cook for a couple of minutes, then submerge in ice water to stop the cooking process.<br \/>\nAdd feta cheese.<br \/>\nDrizzle olive oil, easy cowgirl!<br \/>\nToss in fresh basil.<br \/>\nDrizzle Balsamic Vinegar to taste<br \/>\nMarinate for an hour or two * YUM.<br \/>\nMakes 8 servings.<br \/>\n<strong>Baked Pasta Salad a la Our Lady<\/strong><br \/>\n<em>Ingredients:<\/em><br \/>\n1 package (16 ounces) uncooked whole wheat <a href=\"http:\/\/www.fiberwise.com\/\">Fiber Wise<\/a>* penne<br \/>\n1 container (15 ounces) low-fat ricotta cheese<br \/>\n1\/2 cup grated Parmesan cheese<br \/>\n1 egg, lightly beaten<br \/>\n2 egg whites, lightly beaten<br \/>\n2 jars marinara sauce (26 oz.) (read label &#8211; no more than 60 calories per serving)<br \/>\n1 bag (12 oz) shredded low-fat mozzarella cheese<br \/>\nsalt and pepper to taste<br \/>\n<em>Instructions:<\/em><br \/>\nPreheat oven to 375\u00b0F. Spray 13X9-inch baking pan with nonstick cooking spray.<br \/>\nCook pasta according to box; drain<br \/>\nBeat egg whites and egg vigorously!<br \/>\nMix in ricotta, parmesan<br \/>\nFold in eggs<br \/>\nSalt and Pepper to taste.<br \/>\nPour 2 cups marinara sauce over bottom of prepared pan<br \/>\nSpoon half of cooked pasta over sauce<br \/>\nTop with half of ricotta mixture and 1 cup mozzarella<br \/>\nRepeat layers of marinara sauce, pasta and ricotta mixture.<br \/>\nTop with 1\/2 the bag of mozzarella, remaining marinara sauce and then finally the last of the mozzarella.<br \/>\nCover with foil; bake about 1 hour or until bubbly.
