(recipes included)"},"content":{"rendered":"<p><span class=\"mt-enclosure mt-enclosure-image\"><img decoding=\"async\" alt=\"ART squash.jpg\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/100\/import\/ART%20squash.jpg\" width=\"210\" height=\"288\" class=\"mt-image-left\" style=\"float: left;margin: 0 20px 20px 0\" \/><\/span><big><strong>How to Get the Most Antioxidant Bang Out of Your Veggie Buck<\/strong><\/big>, written and illustrated by <a href=\"http:\/\/blog.beliefnet.com\/ourladyofweightloss\"><em>Janice Taylor<\/a>, Life &amp; Wellness Coach, author and 50-pound big-time-loser.<\/em><br \/>\nWhile many people are true believers in <strong>the power of the raw food,<\/strong> mind-twisting news from researchers in Italy, one of the top culinary capitals of the world, encourages us to boil, steam and even fry our veggies <em>(although, truly, I don&#8217;t know if I can go there, however heavy in antioxidants).<\/em><br \/>\nThe study, which was published in the Journal of Agricultural and Food Chemistry, compared these various cooking methods on zucchini, carrots and broccoli and found that cooking increased certain antioxidants that are crucial to fighting disease.<br \/>\nSo, put on your chef&#8217;s hat and funky apron, get out your steamers and saut\u00e9 pans, and get ready to cook up some carrots, zucchini and broccoli!<br \/>\n<strong>Broccoli<\/strong><br \/>\n<em>For best antioxidant boost:<\/em>  Boil or Steam<br \/>\nResulting in a 31 percent increase in gluocosinolates, which prevents certain types of cancer, as well as a 32 percent increase in carotenoids, which boosts Vitamin A production.<br \/>\n<big><strong>Blessed Broccoli<\/strong><\/big> (from the book, <a href=\"http:\/\/www.amazon.com\/gp\/product\/0142005088\/ref=sr_11_1\/102-7497546-7218537?_encoding=UTF8\">Our Lady of Weight Loss: Miraculous and Motivational Musings from the Patron Saint of Permanent Fat Removal<\/a>)<br \/>\n<em>Ingredients:  <\/em><br \/>\nLemon herb pepper<br \/>\n1\/4 cup white wine vinegar (try white wine fig, my latest obsession)<br \/>\n2 tablespoons fresh thyme<br \/>\nfresh ground pepper to taste<br \/>\n<em>Directions:<\/em><br \/>\nSteam broccoli.<br \/>\nToss all ingredients together.<br \/>\nEnjoy!<br \/>\n<strong>Carrots<\/strong><br \/>\n<em>For best antioxidant boost:<\/em> Fry or Steam<br \/>\nResulting in a 61 percent increase in caffeic acid, which fights certain cancers and cardiovascular disease.<br \/>\n<strong><big>Spiritual Carrot Stir Fry<\/big><\/strong><br \/>\n<em>Ingredients:  <\/em><br \/>\n1 tablespoon olive oil<br \/>\n2 medium carrots, cut into strips<br \/>\n1 large Vidalia onion, chopped<br \/>\n1 tablespoon ginger, freshly grated<br \/>\nsoy sauce, low-sodium<br \/>\n<em>Directions:<\/em><br \/>\nIn large skillet or wok, heat oil.  Stir fry vegetables until tender, yet crisp; approximately 6 minutes. Add ginger and soy sauce to taste.<br \/>\n<strong>Zucchini<\/strong><br \/>\n<em>For best antioxidant boost:<\/em> Boil or Steam<br \/>\nResulting in a 20 percent increase in beta-carotein (a carotenoid), resulting in Vitamin A production.<br \/>\n<big><strong>Zealous Zucchini<\/strong><\/big><br \/>\n<em>Ingredients:<\/em><br \/>\n2 medium zucchinis<br \/>\n6 whole gloves of garlic (or more; as many as you like &#8230; if you love garlic, go for it!)<br \/>\n1 tablespoon olive oil<br \/>\n<em>Directions:<\/em><br \/>\nBring a large pot of water to a boil.<br \/>\nTrim ends from zucchini; cut each zucchini into long 1\/8&#8243; to 1\/4&#8243; inch strips; as skinny as you can.<br \/>\nPlace zucchini and whole cloves of garlic in steam basket.<br \/>\nPlace steam in pot.<br \/>\nSteam until zucchini is semi-soft.<br \/>\nPut zucchini in a bowl.<br \/>\nMash the garlic.<br \/>\nPlace in bowl with zucchini.<br \/>\nDrizzle with a tablespoon or two of olive oil.<br \/>\nSalt and pepper to taste.<br \/>\n<em>Spread the word, NOT the icing!<br \/>\nJanice<\/em><br \/>\nFree Our Lady of Weight Loss <strong><a href=\"http:\/\/www.ourladyofweightloss.com\/e-cards\/\">E-Cards<\/a><\/strong>!
