No Kidding!)"},"content":{"rendered":"<p>Have I told you how much I love, love, love my Slow Cooker (a.k.a. Crock Pot)?\u00a0 Well, I do!\u00a0\u00a0 No matter how much I screw up, as in misread the instructions, measure incorrectly, or forget an ingredient, somehow or another, the slow cooker delivers a scrumptious and impressive meal.<\/p>\n<p>This week, I tried out my new favorite recipe &#8211; Corn Bread Casserole &#8211; on new friends.\u00a0 That was brave of me, I thought!\u00a0 It was one of the best meals ever!\u00a0 Low in fat, low in calories, overflowing with fiber and flavor!<\/p>\n<p>Without further ado, here follows the CORN BREAD CASSEROLE!!!<\/p>\n<p>If you don&#8217;t have a slow cooker, treat yourself to one.<\/p>\n<p>CORN BREAD CASSEROLE!<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredients:<\/p>\n<p>2 (15 oz.) cans Dark Red Kidney Beans (drained and rinsed)<br \/>\n1 large sweet onion chopped<br \/>\n1 red or orange pepper, chopped <em>(I used orange; thought the color looked prettier with the green jalapeno peppers and the yellow corn &#8211; but that&#8217;s just me! Maybe the red is better?!)<\/em><br \/>\n2 jalapeno peppers, chopped<br \/>\n1 cup frozen corn kernels<br \/>\n1 tablespoon garlic powder<br \/>\n1 teaspoon dried oregano<br \/>\n1\/2 teaspoon cumin<br \/>\n1 tablespoon <a href=\"http:\/\/www.penzeys.com\/cgi-bin\/penzeys\/p-penzeysarizonadreaming.html\">Arizona Dreaming<\/a> ( its ingredients include ancho, chipte pepper, jalapeno and cocoa &#8211; no salt!)<br \/>\n1 tablespoon light brown sugar<br \/>\n3 tablespoons hot sauce (I used jalapeno hot sauce)<br \/>\n1 cup taco sauce <em>(from the jar &#8211; easy enough, no?)<\/em><br \/>\n1 cup shredded Cheddar Cheese Light<br \/>\n1 box corn bread mix<br \/>\nFresh Cilantro, few tablespoons chopped for garnish<\/p>\n<p>Instructions:<\/p>\n<p>Gently mix all ingredients together in the slow cooker, with the exception of the cheese, corn bread mix and the cilantro!\u00a0 Cover, cook on high for 2.5 to 3 hours.<br \/>\nThen &#8230; sprinkle the cheddar cheese on top.<br \/>\nWhile the cheese is happily settling into the beans, follow instructions on your corn bread mix.<br \/>\nWhen batter is sufficiently mixed, spread evenly over bean mixture and cook on high for 30 minutes.<br \/>\nWhen done, sprinkle the cilantro on top.<\/p>\n<p>OMG!!!
