{"id":1087,"date":"2011-03-25T15:04:12","date_gmt":"2011-03-25T19:04:12","guid":{"rendered":"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/?p=1087"},"modified":"2011-03-25T15:08:56","modified_gmt":"2011-03-25T19:08:56","slug":"dysfunctional-chef-friday-coconut-rice-an-alternative-to-the-plain-ole-same-ole","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/ourladyofweightloss\/2011\/03\/dysfunctional-chef-friday-coconut-rice-an-alternative-to-the-plain-ole-same-ole.html","title":{"rendered":"Dysfunctional Chef Friday: Coconut Rice &#8211; an alternative to the plain ole same ole"},"content":{"rendered":"<p>Seriously folks, I know that it may not sound exciting, but trust me &#8211; Coconut Rice is beyond exciting; it&#8217;s thrilling!!!\u00a0\u00a0 A delicious alternative to the hum drum plain boiled rice.\u00a0 And if brown rice is your thing, that&#8217;s fine too.\u00a0 Brown, white &#8211; whatever &#8211; just add a bit of coconut and you are cookin!!!<\/p>\n<p><strong>Coconut Rice &#8211; (As Cousin Angus would say &#8230;. an alternative to the &#8220;same ole!! same ole!!!&#8221;<\/strong><\/p>\n<p>Ingredients:<\/p>\n<p>2 cups long grain rice<br \/>\n1 cup water (note the 2:1 ratio &#8211; took me a long time to remember that one!)<br \/>\n2 cups, unsweetened coconut milk (if my supermarket has it in the can, yours does too)<br \/>\na pinch of salt<br \/>\n2 tablespoons organic granulated sugar<br \/>\nfresh shredded coconut, to garnish<\/p>\n<p>Instructions:<\/p>\n<p>Wash the rice in cold water until it runs clear.<br \/>\nPlace the water, coconut milk, salt and sugar in a heavy-based saucepan.<br \/>\nAdd the rice, cover and bring to boil.<br \/>\nReduce heat to a simmer for about 20 minutes, give or take, until the rice is tender to the bite and cooked through.<br \/>\nTurn off the heat, allowing the rice to &#8216;rest&#8217; (after all its hard work) for about 7 minutes (a compromise between 7 and 10).<br \/>\nPut in pretty serving bowl, fluffing it with fork.<br \/>\nSprinkle a little shredded coconut on top for garnish!<\/p>\n<p>Even though a 1\/2 cup (your basic serving size)of rice is 120 calories,<br \/>\nthere&#8217;s coconut milk in this and a bit of sugar, so it&#8217;s more. Approx. 210 calories!!!<br \/>\nTrue enough!
