{"id":1042,"date":"2011-03-16T13:43:22","date_gmt":"2011-03-16T13:43:22","guid":{"rendered":"http:\/\/blog.beliefnet.com\/ourladyofweightloss\/2011\/03\/st-patricks-day-corned-beef-an.html"},"modified":"2011-03-16T13:43:22","modified_gmt":"2011-03-16T13:43:22","slug":"st-patricks-day-corned-beef-an","status":"publish","type":"post","link":"https:\/\/www.beliefnet.com\/columnists\/ourladyofweightloss\/2011\/03\/st-patricks-day-corned-beef-an.html","title":{"rendered":"St. Patrick&#8217;s Day: Corned Beef and Cabbage special"},"content":{"rendered":"<p><span class=\"mt-enclosure mt-enclosure-image\"><img decoding=\"async\" alt=\"KICKOL-LOGO.jpg\" src=\"https:\/\/wp-media.beliefnet.com\/sites\/100\/import\/KICKOL-LOGO.jpg\" width=\"200\" height=\"215\" class=\"mt-image-left\" style=\"float: left;margin: 0 20px 20px 0\" \/><\/span>I generally share <a href=\"http:\/\/www.ourladyofweightloss.com\">Our Lady of Weight Loss<\/a>&#8216;s yum delish healthy recipes on Friday (in my &#8220;Dysfunctional Chef&#8221; post), but tomorrow is St. Patrick&#8217;s Day, and I simply must share the best ever Corned Beef and Cabbage recipe!<br \/>\nIf you make it tonight, it will be that much the better tomorrow!<br \/>\n<strong>Corned Beef and Cabbage<\/strong><br \/>\n<strong>Ingredients<\/strong><br \/>\n3 pounds corned beef brisket with spice packet<br \/>\n10 small red potatoes<br \/>\n1\/2 pound onions, very small wedges<br \/>\n5 carrots, peeled and chopped into bite sized pieces<br \/>\n1 large head cabbage, cut into small wedges<br \/>\n<strong>Alternate spices<\/strong><br \/>\n1 tablespoon coarsely ground black pepper<br \/>\n1 teaspoon ground allspice<br \/>\n2 bay leaves<br \/>\n2 teaspoons kosher salt<br \/>\n<strong>Instructions<\/strong><br \/>\nPlace corned beef in large pot or Dutch oven and cover with water.<br \/>\nSprinkle the spice packet that came with the corned beef. (If you purchased a corned beef without the spice packet, don&#8217;t panic!!! See &#8216;Alternate spices.&#8217;)<br \/>\nCover pot and bring to a boil, then reduce to a simmer.<br \/>\nSimmer approximately 50 minutes per pound or until tender. (In this case approx. 2.5 hours!)<br \/>\nAdd whole potatoes, onions and carrots.
