I am on a train, on my way to Washington DC, and through the miracle of the modern world, my USB port has allowed me to connect to the world wide web and share this most delicious recipe with you.<br \/>\nSeriously, that&#8217;s just how delicious it is &#8230; I couldn&#8217;t wait to &#8216;land&#8217; and plug into my son&#8217;s wireless.  I had the yen, the urge, an itch, a craving to share, share, share now!<br \/>\nSo here it is.  A most seriously delicious and heart health recipe that will impress.  Beautiful, delicious, heart healthy.<br \/>\nReady. Set. Cook!<br \/>\n<strong>Ingredients:<\/strong><br \/>\n1 1\/4 pounds fresh sea scallops (16 more or less)<br \/>\n1 (14.5 ounce) can diced tomatoes<br \/>\n1 tablespoon extra virgin olive oil<br \/>\n1\/2 cup dry red wine<br \/>\n4 cloves garlic, minced<br \/>\n1\/2 cup organic vegetable broth<br \/>\n1\/4 cup Kalamata olives, pitted and quartered<br \/>\n1 tablespoon thinly sliced fresh basil<br \/>\nFettuccini (best bet is to go with whole grain or multigrain Fettuccini)<br \/>\n<strong>Instructions:<\/strong><br \/>\nCook pasta according to package.<br \/>\nRinse scallops, pat dry with paper towels.  Set aside!<br \/>\nSprinkle with black pepper, 1\/4 teaspoon &#8211; 1\/2 teaspoon<br \/>\nSet aside 1\/2 of the diced tomatoes.<br \/>\nIn a blender, combine the remaining tomatoes and the liquid from the can.<br \/>\nCover and blend till smooth.  Set aside!<br \/>\nPreheat large skillet over medium-high flame until hot (maybe 2 or 3 minutes).<br \/>\nAdd oil to hot skillet.   Cook until golden brown, turning once, about 4 minutes.<br \/>\nTransfer scallops to a warm platter.  Cover to keep warm.<br \/>\nAnd NOW &#8230; the sauce!<br \/>\nAdd wine and garlic to skillet.  Cook until wine mixture is reduced by one-third.<br \/>\nAdd the reserved diced tomatoes, the pureed tomato mixture, and the broth.<br \/>\nBring to boil.  Reduce heat.  Simmer uncovered for about 4 minutes<br \/>\nRemove from heat.  Stir in olives!<br \/>\nSpoon sauce over pasta.  Arrange scallops on top and then sprinkle with basil!<br \/>\nYum!
